Post Workout Smoothie

Bootcamp training this morning was brilliant! I had such a terrible night sleep that I needed something to get the energy flowing, and a 40/20 workout was just the thing for that. By the time I'd finished the warm up I was raring to go!

However, when I got home I realised my iMac had shut itself down and when powered back up it wouldn't connect to the internet - not ideal for someone who has more work to do than time to do it!

Major stress alert!!!

I hadn't had any breakfast before training so I was starving - and trust me when I say I'm not fun to be around when I'm hungry. I'm so grumpy and short tempered! After shouting at my computer a few times and getting close to tears, I decided I needed a quick fix to pep me up. Enter the coconut and berry smoothie.

Jack woke up just enough to check I wasn't going to shoo him off my desk!

It was the perfect pick me up, even if the presentation isn't up to much!

I couldn't even tell you exact measurements to use as I just threw everything in the blender and that was that!

Ingredients

1 tin coconut milk
handful frozen berries
2 drops vanilla essence
1 chopped apple

I think a banana, chopped and frozen, would have been lovely in this smoothie too, and possibly an avocado. But alas I had neither to hand, so made do with this. Super creamy and delicious, it cheered me right up!

If only it could have worked on my iMac too...
